When my husband and I did our trial with a gluten free diet, we discovered a mutual love for Panera’s Baja Grain Bowls…and also realized how simple they would be to make!
Packed with whole grains, avocados, and veggies (and topped with full-fat greek yogurt!), these super easy grain bowls are the perfect light dinner or lunch meal prep idea!
Add in your own flair according to what you love — red onion, guacamole, and feta would also be great in this. (Or top with some leftover grilled or rotisserie chicken for some extra protein!)
